Glory of the Morning Muffins
2 cups all-purpose flour
1 1/4 cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups carrot pulp
1 cup pineapple pulp
1/2 cup raisins
1/2 cup chopped walnuts or pecans
1/2 cup unsweetened flaked coconut
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract

DIRECTIONS:
1. Preheat oven to 350 degrees. Grease 24 muffin cups or line with paper muffin liners.
2. In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, pineapple, raisins, walnuts, and coconut.
3. In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
4. Bake in preheated oven for 22 minutes, until a toothpick inserted into center of a muffin comes out clean. Makes 2 dozen muffins.

 

 
 

Dog/Horse Treats
2 cups of instant unflavored oatmeal
1 cup bran flakes
1/2 cup of apple pulp
1 cup of carrot pulp
1/4 cup molasses



DIRECTIONS:
Mix oatmeal, bran, apple and carrot. Add molasses as necessary to make a workable dough--mixture will be dry but slightly sticky and hold shape when squeezed into a ball. Form 1 tablespoon of the mixture into 1-inch nugget, flatten to ½ inch, repeat with remain dough. Place on non-stick or parchment-lined baking sheet. Bake at 325 degrees F for 60 minutes, turning once, until crispy. Turn off oven and let cool.
